Four seeds sprouted, so I moved them into separate pods.
I am so anxious to see them bloom. I hope they grow fast!

I decided it was time to thin the Harvest to one plant to give it room to sprawl.
I did not keep the biggest plant, but the one with the best shape and the biggest root.
And I decided not to repot the 3 extras. Instead they are going into a pot of Indian curry tonight!

OMG these look like what I had pulled from between my bricks when I first moved into this house. I wonder if they were purslane and not weeds

Yes, they were probably purslane. It IS a weed. It is also edible. The wild ones have yellow flowers. And spread like weeds!

Ok then, now I know LOL. I never saw flowers probably because I thought they were weeds and got rid of them LOL... I learn something new each day.

My purslane is sprawling out of the Harvest. My first thought was that I need to repot it.
Then it dawned on me -- I can trim it and eat the trimmings at dinner tonight!
Funny how you can grow an edible plant and get so caught up in growing it that you forget that you can eat it!

The purslane is prolific! This is my second harvest!
The first picture is after trimming it. The second shows the trimmings.
About the taste, it is very mild without the tartness of purslane that grows in soil. I like the taste raw, but I do not like how mucilogenous it is, so I would not eat it in salads.
I do like it in spicy sauces, especially in curries.
I am refrigerator pickling most of my harvest in leftover giardeniera brine. I will let you know how it tastes in a few days.

The purslane has decided to grow more compactly since its last trimming.
BTW, the pickled purslane stems were superb. Crisp and crunchy.
The pickled leaves were pretty awful.

The purslane is growing well. I doubt I will eat any more of it, but I am really looking forward to the red flowers!
