mike, do you think I could substitute rice vinegar? It has a milder taste and I think I would like it better.

Yes. I don't think I'd like the taste. I don't know that for sure, though.

Most any vinegar (save maybe balsamic) has a milder flavor than white vinegar. Some cooks like to say that white vinegar should be used for cleaning and nothing else. But, to each his own!

I have decided to terminate this garden. 1. I dislike the taste of the fresh green peppers. 2. The plants were getting ugly. 3. These develop weird looking bruise-spots on them (I can't think of a better word for it), 4. Perhaps pickling the green peppers will make them taste OK. Here is the final harvest. The final three pints of Pickled Pot-A-Penos (That makes 18 pints of pickled peppers, so far.) 24 oz. White Vinegar 1 Head Fresh Garlic (divided among 3 jars) 2 Tbs. Splenda 2 Tbs, Sea Salt 3 tsp. Mustard Seeds

The bruise spots are odd. Nevertheless, the peppers made pretty pickles.

Yes, odd. You can see one on the photo of the red one on January 24. Weird. Looking at the red pepper photo, the bruise spot seems to be slightly caved in, like a crater. Is that right?

Thanks. My banana peppers get areas of brownish or purplish colors, so I wondered. I'm too new to growing peppers to really recognize what's abnormal.

I made a late lunch of scrambled eggs, refried beans, salsa and 8 Pot-A-Peno rings. The ripe rings are so sweet they are like candy. The pickling only makes them better. A couple of green rings were in there, too. The pickling removed all grassiness from the flavor. They don't taste bad now. The ripe and unripe ones have completely different flavors. I still doubt I will grow these again, but if you are willing to wait for the ripe ones, they are worth it,
