Peal, slice on a mandolin, dip in Olive garden Dressing, sprinkle with Parmesan Reggiano, put in air fryer or on a rack in the broiler .. heaven on a plate! (also freezes perfectly) Sorry, before you put the cheese on, cook the first side, flip, sprinkle, cook again.. Been a while, been eating all my frozen over the winter. Sounds wonderful! Except I would skip the peeling.

Today I weighed the haul, and it came to 2 lbs. 12 oz. That's enough for 2.5 scalloped eggplant recipes, so I'm going to cook it all up and then freeze half of it. Don't know how well it will survive freezing, but Chef Google says you can freeze eggplant casseroles, so I'll find out! 🍆🍆🍆🍆🍆 I'm really intrigued by airscapes 's recipe, but that will have to wait until the next harvest. I don't have all the ingredients on hand.

Day 216. The eggplants have probably reached the end of their natural lifespan, after two harvests. They had a lot of foliage and a few blooms and eggplants, but on closer inspection the leaves were all dry and unhealthy looking--even the newest leaves. The roots are light brown, but look fine. I took off all of the unhealthy leaves and branches, and will give them a couple more weeks. However, I don't expect them to grow back and produce a third harvest. These don't need to be planted in a Farm Plus or Farm XL. The light is currently only 16" above the grow deck. They're okay in any tall garden, as long as you don't try to grow more than one or two.

The two Fairy Tale eggplants are definitely producing new leaves and blooms. I really want to plant something else in their Farm 12XL, but I can't until we find out just how long they will continue to produce! Photos to come soon.

Day 231. In only 2 weeks, leaves have filled the garden again, and there are new blooms and many buds (arrows).

Wow, lynnee! That is so exciting! The leaves are even larger today, and there are new eggplants developing. That is obviously the perfect spot for growing Fairy Tale eggplants! It should be Fall for them, but they don't know it.

The Fairy Tale eggplants have a lot of blooms and harvestable eggplants on them, again. This will be the fourth harvest. I'm going to tend to them tomorrow or on the weekend, so there will be a photo or two if there is anything new to show.

You people are too funny! I've pleaded with these two plants to wind it up so I can grow something else, but will they listen? Nooo! This is how they look today. I still need to harvest the eggplants and cook them this weekend. There are two huge ones and a lot of little ones that aren't visible. At least one of the big ones is well past the point when it should have been eaten.

Yes, it's fun just growing them. I feel guilty about not eating all of the eggplants, though. Go figure!
