mike, that is a lot to try to keep going at one time. It totally explains how you have so many peppers! I bet you have a lot of jars waiting to be eaten!

Pickled Pepper Review
I just sampled a fully pickled version of these Jamaican Yellow Mushroom peppers. It has a different taste pickled. It has lost the floral taste. It isn't fruity anymore either. What it has is a clean pickled pepper taste. Not overly pickled, but very nice. My first impression was "Where is the heat?" Then Wham! Constant full on heat. It was enough to make my nose run, but no tears. Cayenne pepper heat. The heat lasted about 5 minutes.
This pepper is a real winner. Now I found a way to keep them for a long time. I think the pickled version will be better in chili. Without pickling, the floral notes didn't suit chili as well.
