What kind of cheese- Blue cheese crumbles to go with the dressing, or something else complimentary to the dressing? And will you roast the jalapeño first?

I prefer the Litehouse brand of refrigerated dressings, most of the time. I frequently add cheese to it, but less than half of the time. I will seed and vein the Biker Billy jalapenos prior to sautéing them in olive oil.
