After having purchased and successfully used a stovetop smoker for the first time (steelhead trout smoked with cherry wood), I've been thinking of making my own chipotles. Chipotles are typically fully ripened jalapenos that have been smoked and dried.
Has anyone tried this before? Any pointers on wood selection and/or how long?

Stovetop smoker? Woulden't that set off the smoke detectors?

Mark has smoked jalapenos but I do not remember what smoke we used. They were really good. Here is a picture of a few we smoked with some ribs

Stovetop smoker? Woulden't that set off the smoke detectors? You'd think, wouldn't you? The lid seals well enough that as they assure in the instructions, it doesn't leak much more than a cigarette (but it smells a heck of a lot better). That, and you don't use that much wood: one and a half tablespoons of fairly fine cut wood chips. The idea seems to be that it doesn't generate that much smoke, but keeping it contained in the box, it's enough. God knows, I've set off the smoke alarm so many times before NOT trying to smoke something that it was quite surprising to me that I didn't this time. Of course, I had the stove hood fan going and the windows open.

Please let me know what brand and model you have. If it doesn't set off the smoke detectors, I'm getting one. I LOVE chipotle.

Thank you. I just ordered the Original Value Pack from Amazon. Next on the AG project list, Jalapenos. I think the Jalapeno M variety. Those were most successful for me.

Is that what that is??!!! My Mom had one when I was growing up but I never saw her using it, and never saw any wood chips around, so I didn’t get it. I think I did ask her once what it was for and I think she answered “salmon”. Which I never understood. Until now. Very cool. Hmm, I may have to add to my kitchen toys...

I received the 8 pints of different wood chips today. They needed my signature for the smoker. So I have to go to UPS, tomorrow. UPS after four PM is a nightmare. Wonderful! What a pain for a $60 item.

Speaking of delivery mishaps, we’re in a massive heatwave and I just found out the bottles of Duke’s mayonnaise I ordered have been sitting outside since yesterday at 4:30! On a happy note, I’m looking forward to ordering the smoker with my next paycheck. Though the value pack doesn’t cost that much, I’ve indulged in way too many goodies and toys this month to justify it. Meanwhile I’ll have fun watching you guys break yours in.

There are 33 units in my condo building. If they need a signature, then I'd rather pick it up. UPS isn't that far.

Presented the first chipotle experiment to the group at work for Wednesday breakfast. They were much appreciated and commented on, except for the guy who likes hot peppers getting the hiccups.

If you bought the mayo from Amazon, you can just print the return label straight from Amazon.
Was your first experiment just the jalapenos you smoked, or did it go into a dish?
I picked up mine from UPS today. It's still in my trunk. (my hands were full with lunch bag and brief case)
