Thanks! I think so too. And they taste even better! So looking forward to full plate of them tonight! Off to MIL's in a few hours. It is her 86th birthday today!!

Didn't get to make tostadas last night! Forgot it was a club dinner meeting night. Have to make them today, for sure. Already thawed out the chicken.

Decided on Fiesta Tacos instead of Tostadas. Basically, the same thing (in my house), except I make a super-sized taco from a flour tortilla instead of a bowl. And, I fry it instead of baking it in those taco bowl makers - yes, the baked ones are healthier, but the fried ones are necessary, sometimes!

Looks like a wonderful meal!! Thanks & it is & was! I model it after a Fiesta Taco from Tilly's in Santa Monica. Not sure if they are still around, but the Fiesta Taco was a favorite of ours. When we moved to the PNW, I had to learn to make a lot of things that we cannot get up here. It actually makes life easier, in a lot of ways...LOL. I start with the shell, then a layer of fat free refried beans (or similar), then a layer of Rice Cooker Spanish Rice, then a seasoned/cooked meat of your choice (I usually use chicken), then your greens, chopped tomatoes, any other veggie of choice, shredded cheddar, guac, sour cream, and ta-da! I great meal!

Along with last night's spaghetti dinner, I made a salad of fresh lettuce and tomatoes from the AG. Mikey gave a sincere thanks and said how much he had missed the AG lettuce, when we were in between AG lettuce gardens! It is nice to know it is appreciated!

Am I interpreting that photo correctly? A farm growing system, set atop some type of rack, inside an upside down lid to catch water?

Yes, sort of! It is the rack that is upside down. The "lid" is a tray I bought from the restaurant supply store, formerly Cash & Carry or Smart & Final, or one of an assortment of other names, and now call U.S. Foods Chef's Store. It works well so I can separate and trim up the roots for the plants in my AG Farms. And it was not expensive! Turns out, it works for the AG Sprout too. The AG Bounty has a built in support, so it isn't needed. That's all the different AGs I have.

In preparation for our camping trip, I ended the lettuce garden today. I got a good deal of Red Leaf and Parris Island to take along with us. Very please with this batch!

Enjoy your trip. And glad you have your home grown lettuce to take along! Thanks & me too! I'm making lasagna to share on Wednesday night. I've made Homemade Crunch Bars and Deluxe Whipped Jello. I've got Burrito meat that will be in the freezer until needed. Everything else will be made on-site. I'll be on duty again on Friday, so, I'm making Crock Pot Santa Fe Chicken...thank you, Shawn! We share cooking duties. It is fun and no one goes hungry!
