And here are the last 4 quarts fermenting. The left two I put in Friday. The right two this morning. Look at how the fermentation has made the brine cloudy in just two days on the left. In three weeks I make sauce.

Everything is done fermenting. I have two bags of red peppers and one of green. I also have garlic cloves and pearl onions fermented. Everything is now in the freezer. Sometime over the holidays, I will make separate hot sauces. One green, one red. I don't think these sauces will have as much heat as I thought they would, but that could be a good thing. What amazed me was how different the fermented green and fermented red peppers smell. I think these sauces will be quite unique. (I hope in a good way).

I'm finally running out of the old sauce. I have these peppers frozen and fermented just waiting to be made into sauce. Soon.

Wow mike! I'm fascinated with your pepper passion but, from what I see, you and I are on opposite ends of the scoville scale! I'm a sweety... (at least that's what my wife always told me)

I like all of 'em, sweet and hot. I prefer the sweet ones pickled, not made into sauce. I still have a ton of those in the fridge. They get used in sandwiches, in eggs, on pizzas. I even tried pickled Anaheims on a peanut butter sandwich. (not bad). Sweet and hot peppers all make wonderful jellies and jams, as well.

It'll be a simple sauce. Peppers, Vinegar, Garlic, Salt. I don't have enough to make a lot, but based on the flavor profile I want to taste the real flavor of this sauce . It's supposed to have habanero taste with less heat. Only Cayenne heat.

Today's the day. I'm sanitizing the blender bowl right now. As soon as the Dawn liquid simmers for 5 minutes it will be ready. Rinse and start preparations. Today I'll be doing the Red Real Deal base sauce. These are the red ripe Real Deal peppers, Apple Cider Vinegar, fresh Garlic, and Sea Salt. Depending on how thick it turns out, I may add Guar Gum to thicken it some.
Tomorrow, I will make the green, or left over sauce. That will be mostly the same ingredients. But it will have some White Habaneros and Onions as well. This is using the not fully ripe and green Real Deal peppers.
