After dinner I decided to dig the garlic. It will sit here for a few weeks until it is as dry as it can get in the humid outside air. I have very little room where it can sit in the shade and get some air to dry. Going to make another smaller wheeled cart that can put this on and roll it under the pickup truck. The air flow in the driveway is much better than here on the porch. Once it is as dry as it get, it will be tied to a rope and brought inside in the AC.. still have a lot of Garlic from last year to use or give away to make room for the fresh. Last years, Cloves are starting to dry out but my wife said most are fine. Guess you don't have to worry about vampires much! It looks great!

So at lunch time I pulled out all the onions, but left the Shallots in as they are still spiting into multiple bulbs. I have no place to store all these.. not sue what I was thinking!! Shallots

It was delicious.. I was comatose by 1:30pm.. I did eat too much of it as normal, only 8 small slices left after that lunch.

The weather here has been soo hot and humid, some of the onions sort of cooked when curing in the garage. The surface of some have small moon shaped craters where it looks as if the first couple layers dried and then the moisture below burst through the hard outer skin. Once opened up, it is fine inside below that area, so those get eaten first. I have just finished bagging and hanging all 32 bags for storage, we have 4 bags of the ones I didn't think would store well, to eat now. I have them hanging on my light rack in my office where I start seeds and use my DIY bounty. Have the fan running 24x7 for a week or so since the shallots were not fully cured. Once they are dry, I can switch to the timer and run 15 minutes every hour and then reduce as time goes on.

Have not posted in a while, not much going on, Nov 7th, still have not remove the tomato plants, no hard frost yet. Been picking the green ones that are largest before each heavy rain. They do ripen and still taste better the Campari from the store. The carrots are starting to push out of the ground and a good hard frost does not seem to be in the near future. For those who may not know, once a root vegetable gets hit with a hard frost, they get very sweet. So I leave the carrots in until at least 2 frosts.. sometime that means digging them out of partially frozen ground. Today it is going to 70 again .. same as tomorrow.. Last year I pulled them Dec 12.. same as the pervious year, but climate change is not real according to some.. seem real to me! Just had a terrible thought.. since the carrots are mostly mature and tomorrow Nicole will dump 2 inches of rain, I fear the carrots will split.. Time will tell..

Your outdoor garden is so fabulous! No, I did NOT know that carrots got sweeter after a hard frost! Hopefully you will come through Nicole’s hit okay.
