You would have been in bliss this afternoon then. My 32 year old daughter and I spent an hour chatting Low Carb, Keto, Paleo, etc. I used to teach it about 20 years ago to patients at a doctor's office, and Dani is having a lot of health issues so her doc wants her to go on it.

Healthwise, best decision I ever made.
But giving up starch and coca cola was a bee-hatch. But, I've come to understand that it's the same for me as giving up alcohol would be for an alcoholic.

I am on a 'see- food' diet!I've been on this diet for a number of years. I switch to a new diet periodically. My newest effort is an AG diet. Having salad greens from my AG for lunch today... my first AG meal. 😁

I am on a 'see- food' diet! Since I am home that is my diet. I just wish there were food I wanted to see LOL.

Sliced. I noticed something this morning when I picked 4 more - two were dark purple and the other two were yellow/purple. (Looked like yellow layered over purple.) The two that were purple had no seeds. The yellowish ones both had lots of seeds. Is this kind of thing common with hybrids? When I grew regular size eggplant outside they turned yellow when they were getting too old on the plant. I discovered that by accident. I had meant to consume them but didn’t get to. Did they taste bitter?

Still getting lots of eggplants. It's trying to smother its neighbor. Had to make loops with strips of duct tape over the hood (sticky side folded together) to support the new growth. I keep meaning to post a picture but haven't been online much lately with weird work schedule. Gotta get up at 0230, which is why I'm on this forum with my phone instead of sleeping >_<.

Sounds like it has become a very prolific plant. Are you having to pollinate it or is it pretty much taking care of itself?

As I'm coming to the end of the 2nd round of eggplants, the sweet pickle pepper plant in there with it is pumping out its 2nd round of peppers. Soon, I'm going to have to cut the eggplant back so the pepper plant can get enough light. I had to use duct tape to hold up the branches, and it's trying to eclipse the ajvarski pepper in the neighboring machine. The "patio baby" eggplant is DEFINITELY something I would grow again, but I'll give it its own machine next time. Every time I roast brussels sprouts or asparagus, I slice 1 or 2 of the eggplants into coins and add them to the pan. But once the 2nd round of peppers ripens and I've harvested all of them, I think I'm going to start over with tomatoes in this machine.

I’m so glad you had such success with the eggplants! I’m looking forward to trying them again, but I think I’ll get your seed next time, see if it’s any different for me (mine was grown in a Harvest, that might have limited it). And I agree, roasting these kind of veggies is the way to go!! Yum!

I'm not getting as many eggplants now, but the ones that I'm getting are bigger. Last week, I picked the biggest one I've seen so far, and it weighed almost 3 oz (it was 81g without the stem)!!!
